Makes 12-16 bites, depending on how large you cut them!
Begin by soaking your California Raisins in the amaretto liqueur, allowing plenty of time for the liquid to absorb and plump the raisins up. I leave mine overnight in a covered bowl.
Melt the plain and milk chocolate gently over a low heat in a saucepan with the butter and golden syrup. Remove from the heat as soon as the chocolate has melted.
Break the digestive biscuits and amaretti into small chunks and add these to the melted chocolate mixture along with the almonds and cherries.
Tumble the chocolatey mixture into your prepared tin and allow to cool for an hour (less if your kitchen is cold!).
To make the topping, melt plain chocolate and butter in a heatproof bowl set above a pan of gently simmering water. The heat from the steam will melt the mixture perfectly.
Pour the topping over the set base of your Tiffin and adorn with festive sprinkles. Allow to cool completely and refrigerate until firm enough to cut into neat(ish) squares.
