Add 125g raisins, oats, ground almond, peanut butter, oat milk, zest and juice of a lemon and salt to a food processor, process until smooth and a thick paste is formed.

Transfer the mixture to a bowl. Roughly chop the reserved raisins, add to the bowl and mix well to incorporate.

Divide the dough into twelve equal balls and roll into smooth balls.

Roll four of each ball in the pistachios, cocoa powder and coconut.

Place in the fridge to firm for 20 minutes.

Tip: These energy balls will store well in an airtight container for 2-3 weeks, in the fridge
