California Raisin Brioche

We love baking and spending time together. On holidays, we bring out the flour and decide what to bake. Everyone loves soft and sweet nut and raisin brioches. Muscovado sugar adds aroma and California raisins add depth and richness. Top with a sugar glaze and finish by sprinkling California raisins on top.

Prepare Dough:

Gently warm the milk (not hot). Dissolve the fresh yeast in the milk with a pinch of the sugar and let sit a few minutes.

In a large bowl, combine flour, remaining sugar, salt, and cardamom.

Add the yeast-milk, softened butter/margarine, egg, and mix to form a soft dough.

Knead until smooth and elastic—this may take 8–10 minutes by hand or stand mixer.

Cover bowl, let dough rise in a warm place until doubled (about 1–1.5 hours).

Prepare Filling:

Soak raisins in orange juice for at least 10 minutes, then drain.

Mix almond paste with softened butter, then stir in muscovado sugar, cinnamon, and pecans.

Shape and Fill:

Punch down risen dough. Roll out on a lightly floured surface to a large rectangle (~1 cm thick).

Spread almond filling evenly over dough. Scatter-soaked raisins and chopped pecans on top.

Roll up tightly from the long side, like a Swiss roll. Slice as desired (for buns) or leave whole for a loaf.

Final Proof:

Arrange twists or buns on a baking sheet or place the loaf in a greased tin. Cover and let rise until puffy (about 30–45 minutes).

Bake:

Preheat oven to 180°C (350°F).

Brush with a little beaten egg if desired (for shine).

Bake 20–25 minutes for buns or 30–35 minutes for a loaf, until golden and cooked through.

Cool & Serve:

Let cool on a wire rack. Enjoy your California Raisin Brioche slightly warm or at room temperature.

  • 100g butter/margarine

  • 25g fresh yeast

  • 1tsp cardamom

  • 1/4tbsp salt

  • 60g sugar

  • 1 egg

  • About 480g wheat flour

Filling:-

  • 3tbsp orange juice

  • 4tbsp California Raisins

  • 50g butter or margarine

  • 150g almond paste

  • 120g pecans chopped

  • 3tbsp muscovado sugar
