In a small bowl, combine raisins and orange juice and set aside.
Place the chocolate in a heat proof bowl over a saucepan of simmering water until it has melted, then remove from the heat.
In a separate bowl whisk the egg white and the double cream till it peeks softly.
Put a large spoonful of cream into the bowl of melted chocolate and mix. Now gently fold this chocolate mixture into the bowl of cream till it is evenly mixed.
Divide the mousse between dessert dishes and chill for at least an hour. Spoon the soaked raisins equally on top of each dish and sprinkle with the chopped pistachio nuts before serving.

• 20ml orange juice
